Dol Gin is very fresh, herbaceous and dry. It’s nice neat and it’s perfect for making interesting food pairings. To the nose it’s very fragrant, with fresh juniper notes and Alpine herbs balanced with the spicy notes of grounded pepper. On the palate fruity notes balance the bitter flavour of Gentian root. Refreshing herbaceous notes and dry juniper notes persist all the way through.
Dol Gin is made from a neutral grain spirit distilled in a discontinuous copper pot still. Some of the botanicals are infused and others are inserted through the bain-marie method. The gin is cut back at 45% ABV by adding water from Val Senales glaciers.
History and curiosities
The master distiller Florian Rabanser challenged himself to put together a delicate balance of 24 botanicals from Val di Siusi, in northern Italy. Through Dol Gin he wanted to tell something about himself and his love for distilling, using what his beautiful land has to offer. Dol Gin is the very first gin made in the Alps and it took two years to develop the recipe. Zu Plun distillery was founded more than ten years ago by Florian Rabansen, who has always loved distilling typical Alpine spirits, such as grappas and liqueurs. In 2007 he started experimenting with other kinds of spirits and created a rum and several gins.
